This low fat Chocolate Easter nest is the saving low fat chocolate recipe your kids will beg for next year! And you can have a happy Easter, without the guilt of having eaten “too much chocolate”! And even if it’s not even close to easter time, you can actually prepare this holiday recipe at any time, under any excuse.
For instance, you could easily make it a “Thanks Giving” Chocolate Basket Recipe… or how about a “Christmas Chocolate Basket”?

Ingredients for Chocolate Nest:
- 20 g vegetable shortening
- 1 tsp cocoa
- 3 drops vanilla essence
- 1 Tbs ground rice
- 1 Tbs not-fat milk powder
- The equivalent of 2 tsps sugar in artificial sweetener (I prefer Splenda, as it does not contain aspartame… just in case!) 😉
- 2 Tbs long thread coconut
- 1 Tbs rice bubbles
- 1 Tbs raisins
This is what you do:
Melt the vegetable shortenings in a saucepan.
Remove from the heat and add the cocoa and vanilla essence, mixing thoroughly to get rid of any lumps.
Add the ground rice and milk powder, and continue mixing.
Add the sweetener, 1 Tbs long thread coconut, rice bubbles and raisins, mixing well.
Pour this chocolate mixture into the bottom of a small dessert plate, and sprinkle the extra long thread coconut over surface.
Get a glass and press it into the centre of the nest to create a depression without going through the chocolate.
Chill in a fridge with the glass on top till the chocolate is hard enough to stay in shape without the glass. This has to be done as soon as the chocolate sets, as the glass may get stuck (it does happen, you know?).
Remove the nest from the plate by sitting the plate in hot water for half a minute to melt the bottom edge of chocolate.
Store in the fridge, ready to eat. You could put inedible toys to adorn your nest… what about a plastic chicken?
