This cereal recipe makes 45 serves of 40 grams each. The nutritional information in the table is, as usual, for each 40 g serve. It only takes about 30 minutes to prepare.

Ingredients for low fat muesli recipe:

  • 750 g rolled oats
  • 1 cup of barley flakes
  • 1 cup rye flakes
  • 1/3 cup of sesame seeds
  • 1 cup of wheatgerm
  • 2 cups processed oat-bran cereal
  • 1/2 cup roasted buckwheat
  • 250 g dried fruit medley
  • 250 g sultanas
  • 1/2 cup of sunflower seeds
  • 1/2 cup of pepitas

This is what you do:

In an ungreased oven tray, put half of the oats and bake at 200°C for 15 minutes till golden, occasionally stirring.

If you’re in a hurry, you can put the oats in a microwave (600 W) on high for about 10 minutes (but I prefer the oven method).

Put aside the oats, and do the same with the remaining oats and barley. Put aside too.

Next, toast the sesame seeds in a non-stick frying pan (no oil or grease), till golden (but not burnt).

Mix all of the above ingredients and store away in an air-tight container.

This low fat muesli recipe is high in thiamin, and provides iron, zinc and potassium.
