Ingredients for Poached chicken:
- 1/2 cup low fat sour cream
- 4 tsp low fat mayonnaise
- 1 Tbsp minced tarragon
- 1/2 tsp ground black pepper
- 1 cup chicken stock
- 1/4 cup dry white wine
- 8 peppercorns
- 4 tarragon sprigs
- 500 g skinless chicken breast
This is what you do:
Mix the sour cream, mayo, minced tarragon and pepper in a small bowl.
Boil the stock, wine, peppercorns and tarragon sprigs in a saucepan.
Add the chicken and bring back to a boil. Then simmer for about 10 minutes.
Transfer the chicken to serving plates, and serve with the tarragon cream.
